Halloumi and Roast Veg Baguette

One thing I’m always asked to blog about is interesting lunch ideas


It’s easy to get stuck in a rut of having the same old cheese or ham sandwich day in day out and not knowing how to switch it up

Anyone who knows me will know I am the toastie queen and I am an absolute sucker for paninis and toasties and baguettes and all things lunchy!

So I thought I’d do a few posts here and there on interesting lunch options, things you can enjoy at home (for all you students of leisure) or ones you can pack up and pop in your lunchbox for your lunch break

This is a mediterranean vegetarian baguette absolutely perfect for summer and pretty easy to whip together

You’ll need:

1 mini baguette/bread roll

1 pack halloumi, sliced

large handful peppers, chopped

1 onion, chopped

Handful salad (spinach/lettuce is lovely)

Any sauce/dressing you want!

Pop your baguette into the oven on a low temp to warm through


Fry your peppers and when partly cooked, chuck on your onions


Fry your halloumi in a little oil




When veg and halloumi are golden transfer to a paper towel to absord any excess oil


Pile up in the warmed baguette

We used a generous helping of M&S’s Pesto Mayo which was so good, so I’d definitely recommend getting your hands on that if you can!


Hunt out a patch of sun and get stuck in!
