This was hands down the star of our picnic
Flakey round the edges, soft and squidgy in the centre, and packing all the punch of summer flavours
They’d be incredible at a barbecue or as a light meal, and cooled down as part of a picnic they steal the show!
320g pack puff pastry
a little plain flour, for dusting
garlic & herb soft cheese (not sure how much.. couple of dollops?!)
1tsp chopped mixed herbs
4 small tomatoes (or 1 large tomato), sliced
handful black tomatoes
couple of handfuls of washed rocket
drizzle of extra virgin olive oil
medium beaten egg, to glaze
(courgettes were in the original recipe but I left them out, it’s 2 small courgettes thinly sliced if you want them though!)

Preheat the oven to 200°c/gas mark 7
Cut the pastry into four squares and score a boarder about 2cm in from the edge of each piece and pop onto a lightly floured baking sheet
(save any offcuts for the cheese straws!)
Spread the soft cheese within the scored borders, spread it as thickly as you fancy!
Spread the thinly sliced tomatoes and olives (and courgette if you fancy it) over the pastry
Sprinkle over the herbs then drizzle the olive oil
Brush the edges of the pastry with the beaten egg
Pop in the oven for 15-20 minutes until the pastry is golden and the veg is starting to sizzle
Take some rocket in a separate container and pop over the top when serving.
