Now, I know I’ve left you guys for a while, but I hope this will make you forgive me..
Welcome to the world of Nutella Stuffed Cookies.
And I should warn you, once you’ve experienced these, there’s no going back.
They can be whipped up in seconds, with just a few of the standard food cupboard essentials, and are so addictive you’ll be baking your next batch before you’ve finished nibbling on the first.
All you’ll need is:
100g brown sugar (I used standard granulated sugar and they turned out just fine)
125g unsalted butter
1 1/2 tsp vanilla essence
225g self raising flour
Nutella (enough for the chocolate chips, stuffing and nibbling on)
A few hours before you want to make the cookies, pop a few dollops of nutella onto some greaseproof paper/clingfilm and put into the freezer, these will be your chocolate chips! (Or you can use real chocolate chips if you want, the nutella goes extremely gooey though)
Preheat the oven to 200°c.
Mix the butter and sugar in a large bowl, then add the vanilla essence and egg and mix it all together.
Sieve in the flour and a pinch of salt and mix till thoroughly combined, then throw in your nutella chocolate chips and mix it all up
Chances are the chips will melt a little and form a gooey mixture but this is not a bad thing.
Make sure you have a couple of greaseproof lined trays prepared, then get stuck in to the messy, fun part!
Scoop a small golfball-sized handful of the mixture into your hand, flatten it out a little and add a dollop of nutella, then try to wrap the edges around so the nutella is as fully encased as you can manage, then place on the tray. Repeat this till the mixture is all used up, then lick your fingers/the bowl/spoons/surfaces clean…
Whack them in the oven for 7-10 minutes whilst you attempt to clear up (I never claimed it was a tidy recipe..)
Remove from the oven when looking slightly browned but still delightfully gooey and soft.
Stack ’em up, grab a large glass of milk and tuck in!
