Katy-Jane’s Mega Burger

I think I’ve created the ultimate, perfect, swoon-worthy burger.


In fact that’s an understatement. I hands down have created the perfect burger.


Feast your eyes on the Chicken B.L.A.T.

Tender, juicy chicken. Crispy, smoky bacon. Grilled, succulent tomato. And, get this: fried, breaded avocado.

I’ve only ever had acovado as the base of a gluten-free dessert (which I may or may not share with you in the near future!) but never really on its own. And I’m a strange one with new foods, I don’t often like to have them as prescribed.. I look for an exotic, fancy way to eat them.

And what better way than to breadcrumb them and fry them, providing the perfect crispy crunchy coating for the soft, buttery, creamy avo filling.


And then contrasted with the smoky and salty bacon, juicy chicken, tangy tomatoes, crunchy rocket, you have yourself a pretty fine meal.

And if that wasn’t enough? There’s a lil bit of lemon aioli squeezed in there too.

Without teasing you any further, here’s the recipe


2 slices wholegrain bread (I used the end slices of the bread to get that really thick burger feel, or you could just use a burger bun)

3 slices bacon

Couple of cherry tomatoes, sliced

Handful rocket leaves

Chicken breast

For the Aioli:

1 egg yolk

2 teaspoons lemon juice

1/2 teaspoon garlic powder

1/2 cup olive oil

Salt & Pepper to taste

For the Avocado:

1/4-1/2 avocado, pitted and sliced

1/2 cup breadcrumbs

1/2 egg white + tsp water

1/4 teaspoon salt

1/4 teaspoon garlic powder


Pop your chicken breast in the oven to cook, and about halfway through the cooking time pop the bacon in the oven as well.


To make the aioli, put the egg yolk, salt, pepper, garlic powder and lemon juice in a blender and set to high, then slowly drizzle in the oil. Blend until it looks a similar consistency to mayo. Season to taste and set aside.

(Mine tasted lovely but looked awful as I made it with an electric mixer not a blender, so no photos I’m afraid!)

For the avocados, combine the breadcrumbs, salt and garlic powder in a bowl. Roll the avocado round in the breadcrumbs, then the egg white & water solution, then the breadcrumbs again. Heat some oil on a high heat in a frying pan, and fry the avocados until golden.

Butter y0ur bread on both sides and fry, along with the sliced tomatoes.


Then it’s just a case of building your burger!



Serve with homemade skinny fries and a huge smile on your face.
