Easter Rocky Road

The Festival of Chocolate is fast approaching, and I have an egg-ceptional treat for you all


The girls all got together the other night for our traditional evenings of food, gossip and disney films.

Realising I had no food to take, I quickly whipped up these beauties to take along with me.

Not your average rocky road, this baby has mini eggs and creme eggs too…



With each bite you experience the chocolate melting around your tongue, the crumble of biscuits, the crunch of mini egg shells, the chew of marshmallows and the ooze of creme eggs.

And when they’re this easy to throw together it’ll make you wonder why you don’t have them every day!

I used:

200g Dark Chocolate

200g Milk Chocolate

125g Butter

3tbsp Golden Syrup

1 bag Mini Eggs

1 bag Mini Cadbury’s Creme Eggs

200g Digestive Biscuits

Handful Marshmallows

But of course you can vary the ingredients as you like!

(I might try a mix of dark and white chocolate next time..)


Chop your chocolate into smaller chunks, then add to a saucepan on a low heat, along with the butter and golden syrup

Meanwhile, chop up all your eggs


I chopped most of my creme eggs in half and a couple into quarters


And bashed about the mini eggs so they were in random smaller pieces

Put your digestives into a freezer bag and bash with a rolling pin, aiming for both crumbs and pieces of biscuit.

Whilst chopping up the eggs keep returning to the saucepan and stirring, taking care not to burn the bottom!


Take it off the heat when it’s perfectly melted and smooth


Stir in the digestives


And then the mini eggs and marshmallows, leaving the creme eggs till last to add.

Don’t over stir these as you don’t want to lose sight of the oozy creme!


Pour into a tray lined with clingfilm and spread out to the edges

Dust with any of the shell confetti left behind in the destruction, along with a scattering of marshmallows


Pop in the fridge for an hour or until set

Either cut into fingers or roughly break it up into chunks


A perfect accompaniment to a disney marathon, or to pop into a lunch box for that afternoon pick-me-up


Or if you wrap it up all pretty it makes the perfect Easter gift!

A really cheap, easy treat to make and so addictive you’ll start making the next batch before you’ve even had chance to lick your fingers & plate clean!
